Almost enough to donate!

I chopped seven inches off my hair, I didn't realize it was such a drastic cut or I would have gone even shorter and donated my hair!  (You have to cut at least 10 inches for a donation). 

*This picture is from the ballet today!  We saw Peter Pan and attended Tinkerbell's Tea Party!  It was an amazing production!

One more lazy river picture


Homemade Chicken Salad

I made my own chicken salad for dinner from Lorelai's leftover chicken from lunch today. I made chicken breasts in the crockpot (wrapped in bacon and drizzled in olive oil, cooked on low for five hours). She only ate half of hers so I used the rest for my dinner. Just added miracle whip, a Granny Smith apple, crasins, and salt and pepper!  Delicious and economical!

Lamb, it's what's for dinner...

Lorelai has declared my broiled lamb steaks as  her favorite meal!  I only buy it when I can find it on managers special (for $3 per chop)... which would make it a GREAT deal, but since she eats TWO it's just a good deal, haha.

Level 3, BOOM

We've moved on to Level 3. We're now able to lounge in bed and read our own books!  

Spring Break 2014




We took a road trip to Branson, MO for Lorelai's Spring Break!  If you're looking for an affordable kid friendly place, this is it!  We went to an indoor water park, complete with a lazy river. We went to Silver Dollar City Theme park (home of The Beverly Hillbillies), we explored Marvel Cave, we played countless rounds of indoor mini-golf (where she got her first ever hole in one).  We played at the arcade and went to the kids party every night for the "balloon drop". We also saw part of The Ozark Mountain Jubilee show, and The Amazing Pet Show!  It was a great long weekend vacation. 

My only regret is that I didn't buy the picture of Lorelai on her first "big" roller coaster. She was terrified but is giggling about it now and reenacting it for everyone.  I'm thinking of making her a t-shirt that says I survived The Powder Keg.  I should have bought her one while we were there but it was traumatizing at the moment, haha!

*I ended up calling the theme park and was able to track down The Powder Keg picture!  Classic!!!  I can't wait for it to get here!

1st riding lesson!



Lorelai has always expressed an interest in horses, she's checked out the same horse book from the school library at least 3 times. So two weeks ago when she got a chance to go out to ride she jumped at the chance. She loved it so much we got her signed up for lessons. Lorelai's Uncle Derek took lessons when he was Lorelai's age and my mom still had all his old gear so she wore his pants, boots, and sweatshirt for her first lesson!  She had the old helmet too, but got a new one that is up to modern regulation.  What a fun adventure this will be!

Fat Tuesday

My best girlfriends and I went out for a crawfish boil on Fat Tuesday!  DELISH!!

First official riding lesson is tomorrow!

Lorelai went to bed at 7 tonight because she wanted to be well rested for tomorrow. She's going to her very first ever riding lesson!  She's got Uncle Derek's old gear and is so excited to mount up and learn to ride!

1 Dog Night

Our power was out with the ice storm last night, luckily we stayed toasty by tucking CC under the covers!

Snow Day


We're home bound with ice and snow, and having lamb chops and eggs for breakfast with almond milk in the coffee.  Lorelai loved the breakfast and needed a good refueling after a run on the inner tube!

Greatest Day






Crockpot Kitchen

Organic chicken breasts tied with turkey bacon, layered with Granny Smith apples and drenched in lemon juice and Sweet Baby Rays honey barbecue sauce.  It smells delicious!  I'm serving it with banquette bread, and can't wait to dig in. The apples turned to mush in the crockpot though, I'm already thinking I'll use pineapples instead next time. 

*UPDATE:  The mushy apples were to die for and Lorelai loooooved the meal, and has already requested that we make it again soon!
